Ingredients

Floury varieties, such as Maris Piper or King Edward. They break down as they cook and mash smoothly. Waxy and salad potatoes hold their shape and can leave mash lumpy or gluey.

Yes. Around 10 to 15% fat browns well and stays moist. Very lean mince (5%) gives a lighter filling but can dry out — avoid over-reducing the gravy, and spoon off excess fat with fattier mince. See the recipe's ingredient notes.

Not automatically. It traditionally contains fish, usually anchovy, so it is not vegetarian. Gluten-free status varies by brand — check the label of the bottle you have, and check your stock in the same way.

Yes. The filling will taste a little less sharp and savoury without it, so taste before assembly and adjust the salt if it seems flat. If fish is the reason for leaving it out — the standard sauce contains anchovy — use a vegetarian alternative sauce instead.

Cooking and assembly

Thick enough to coat the mince like a sauce, not surround it like soup. A spoon drawn across the pan should leave a trail that fills in slowly. Full detail: the recipe page's tips section.

Not completely. Let it stop steaming fiercely, so it does not melt the base of the mash, but warm filling under warm mash bakes evenly and keeps the layers distinct.

Look for steady bubbling right around the edges, not just in one corner, and steam rising when you break the surface at the centre. With a food probe, the centre should read at least 75°C. Never test the heat against your skin.

The mash seals the filling in. A gap at the edge is where the gravy escapes and bubbles up through the topping instead of staying under it, so work the potato into the sides and corners and patch any thin spots before forking the surface.

Variations

The meat: beef for cottage pie, lamb for shepherd's pie. The method is much the same.

Yes, with cooked green or Puy lentils, vegetable stock, and no standard Worcestershire sauce (it contains fish) — use a vegetarian alternative or leave it out. It is a variation in its own right: see lentil cottage pie.

Replace the flour with cornflour stirred in near the end of simmering, and check the labels of your stock and Worcestershire sauce — neither can be assumed gluten-free. See the gluten-free adaptation.

Make-ahead preparation and leftovers

Yes. Assemble it, let it cool, cover and refrigerate. Bake from chilled at 200°C conventional / 180°C fan / Gas Mark 6 for about 35 to 40 minutes (estimate), checking the centre is steaming hot.

Cool leftovers ideally within one to two hours, refrigerate (fridge 0–5°C), and eat within two days. Reheat only once, until steaming hot all the way through with no cold centre. This follows current UK guidance from the Food Standards Agency and Food Standards Scotland. Full detail is in the recipe's storage section.

Yes — assembled and unbaked, or cooked and completely cooled. Portions defrost more evenly than a whole pie. Defrost thoroughly in the fridge and cook and eat within 24 hours of defrosting. Do not refreeze a defrosted pie.

Website timer and printing

Browsers block sound until you interact with the page. Tap Enable Sound on the timer, then Test Alarm to check it on your device. No timer ever starts on its own when you open a page.

It cannot be guaranteed. The alarm works while the page is open in your browser; a closed browser, a sleeping device or a system that suspends the page can prevent it. Timer state is stored on this device only, so a running timer survives moving between pages on this site.

Use the Recipe-Only View button at the top of the recipe page. It leaves only the recipe card on screen — ingredients, method, times and dish size — without navigation, the timer or the long explanations, in a clean layout you can print or save from your browser or device.
